A spirit level is a little glass tube of liquid, and the only part of it anyone ever looks at is the part that is not liquid. The bubble is just the room the liquid left over, and because the tube is very slightly curved, that leftover room drifts to the highest point, which sits between the two lines only when the thing is true. So every straight shelf in every house was hung by watching a small gap find the top.
